Since this whole allergic reaction thing, Cory has been taking very good care of me! Tonight he made red beans and rice with Cajun tilapia. Yummy! It was a bit on the spicy side, but very good! Sunflower Market has a great Cajun seasoning he rubbed on their farm-grown tilapia. And Zatarans red beans and rice can't get easier. Thanks babe for making dinner!

Butternut squash pizza bites take 2! Much better! I cooked them for 15 and then 5 more with sauce and cheese! Oh and cheese tortellini with light Alfredo!

What's for dinner? 3-9-13
Tonight was an "easy" dinner night. I had to get an epi shot for an allergic reaction, so Cory made some vegetarian, preservative-free food from Trader Joe's! We mixed Japanese and Indian tonight, but it was delicious!!!

Too stressed out to cook...
Tonight is not a good night for our diets! I'm prepping for a big project at school in conjunction with parent teacher conferences and I'm also teaching water aerobics tonight. So don't judge but Cory is getting a Carl's jr. Charbroiled cod fish sandwich... Surprisingly, not bad on weight watchers points! Me, since I have to eat and be ready to teach before Cory gets home...I'm eating a frozen Aussie pie. Well, I'm cooking it not eating it frozen, but its not homemade. Also, it's not vegetarian because I can't cut meat out completely and I'm missing NZ lamb!!
We're not perfect but we're trying to be good. Love you all!

March 1, 2013-Dinner
Dinner tonight was takeout! Yes, Cory and I do eat out. We're not crazy even though we do eat fake meat.
Anyway, we had takeout sushi from our new favorite restaurant Red Ginger. Red Ginger was recommended to us by my good friends Caitlin and Michele that work with me! Red Ginger has HALF-PRICED rolls all the time! So Cory and I can eat GOOD sushi for cheap! Only thing is, their service is not amazing. But we deal with it in order to have quality sushi for a price we can afford to pay frequently! For those of you that are interested, Red Ginger is located at 3333 S. State Street! My favorites: the spicy tuna roll and the Vegas roll! Delish!

Update to tonight's dinner
If you make this, which I recommend you do, cook the squash longer the first round. I only did it for 10 minutes like the recipe said but it wasn't enough and they were crunchy. Also, not really a meal unless you make a bunch. It would be a better snack or appetizer. :-)

2-25-2013 Dinner
Dinner for tonight:
Quorn Tacos!
Lowfat tortillas from Sprouts Market
Sharp cheddar cheese (we can't eat diet cheese, it's gross!)
Quorn Grounds
Taco Seasoning
Salsa
Plain Greek Yogurt (instead of sour cream!)
Quorn is a meat-less, soy-free product that I cook with some water, taco seasoning and salsa till it looks like regular taco meat! You can find it at Smith's and at Sprouts Market or other natural/farmer's market type stores!

Healthy Eating and Exercise for the Robinsons!
Cory and I have undertaken a new diet and exercise regime! Due to Cory's high cholesterol (at 26!!), his doctor recommended that he try a vegan diet. However, that is HARD, so we have become vegetarians. Well, Cory is a vegetarian (except fish) and I eat meat occasionally. We are going to start sharing our recipes and ideas as we continue our adventure!
*We have been doing this for about a month and a half?? Cory has lost 20 pounds and I've lost 10! Nice job to us!
